REXBURG – Customers have developed a strong addiction to the delectable and nutritious offerings at Tropical Smoothie Cafe, according to restaurant manager Alex Plummer. Located at 113 South 2nd West in Rexburg, the eatery has been in operation for eight months and has been attracting smoothie enthusiasts from all corners of the city.
Tropical Smoothie Cafe offers a diverse menu consisting of smoothies, bowls, sandwiches, wraps, flatbreads, salads, and more. Plummer, in an interview with EastIdahoNews.com, disclosed that the most popular item on the menu is the Bahama Mama, a delightful smoothie composed of strawberry, pineapple, coconut, and white chocolate. The EastIdahoNews.com team had the chance to sample this particular smoothie along with other menu items, which is showcased in the accompanying video.
The proud family business is owned by Kelly and Nepal Plummer, with Alex Plummer serving as the restaurant manager. Alex expresses immense satisfaction in being a part of this endeavor and takes great pride in the establishment’s success. Having something that I can call my own and take ownership of (is fulfilling), he shares. It’s something I take a lot of pride in.
Originating in Destin, Florida in 1999, Tropical Smoothie Cafe has expanded its footprint across the United States in recent years. The Rexburg store is the sixth location of the franchise in Idaho. Alex Plummer first learned about the brand while serving as a missionary for The Church of Jesus Christ of Latter-day Saints in Arkansas. It was during that time that he discovered his fondness for the establishment, which ultimately inspired his family to introduce it to Rexburg.
The Plummers, eager to embark on a joint business venture, approached the company and expressed their interest in franchising. When an opportunity arose, they seized it. They sent a letter (to the company) saying they were interested in franchising. An opening came up and so they snagged it, Alex explains.
The family has already set their sights on expanding their tropical empire, with plans to open another location in Idaho Falls in the near future. Their ultimate goal is to have a total of four or five locations in the area. Alex expresses enthusiasm about exploring potential opportunities in different parts of the region. We’re poking around everywhere. They’re developing new places out by Costco on that side of town. We’d love to get our foot in the door over there somewhere, he states.
In the meantime, Plummer wholeheartedly encourages residents and visitors alike to stop by the Rexburg location and experience the delightful cuisine for themselves. Tropical Smoothie Cafe operates from 7 a.m. to 10 p.m. Monday through Friday, with an 8 a.m. opening on Saturdays. On Sundays, customers can enjoy their menu offerings from 10 a.m. to 8 p.m.
