Reflecting on the changes in the restaurant industry since he started, DiSpirito highlighted the shift from a serious and rigorous atmosphere to a more relaxed and enjoyable one. He mentioned esteemed chef Daniel Boulud as an example, who transformed from an incredibly serious individual to a more charismatic and fun-loving personality. DiSpirito acknowledged that in the past, learning culinary techniques required hands-on experience and mentorship, unlike today’s ease of accessing instructional videos online.

When it comes to owning a restaurant, DiSpirito stressed that it is often a labor of love that requires substantial personal investments. He contemplated whether the restaurant business should be considered a non-profit public service due to the dedication and sacrifices made by owners.
