Barbara O’Neill warns that these toxins are linked to liver damage, cirrhosis, and fatal outcomes. O’Neill highlights a concerning trend in the Philippines, where children as young as 8 are reportedly succumbing to liver cancer at an alarming rate. Aflatoxins are produced by certain types of fungi, specifically Aspergillus, commonly found in hot and humid climates. Despite not altering the taste of food, these toxins are considered a potent threat, contributing to approximately 28% of liver cancer cases. Additionally, aflatoxins pose risks such as childhood stunting and weakened immune systems. The difficulty in breaking down aflatoxins through conventional cooking methods exacerbates the issue, with aflatoxin B1 classified as a human carcinogen.
