What sets this cocktail apart is the use of tom kha soup. Not found on Apothecary’s food menu, the soup is specially crafted in the bar’s kitchen solely for this drink. The ingredients include coconut milk, sugar, vegetable stock, fish sauce, gochujang, galangal, and lemongrass. To infuse the gin with a burst of flavor, it is cooked sous-vide at 135 degrees and prepared with makrut lime leaves and lemongrass. The cocktail is then shaken with lime, poured over ice, topped with club soda, and garnished with a button mushroom and Thai basil.

When it comes to taste, the Tom Kha-llins starts with a refreshing citrusy and light flavor. As you savor the drink, it slowly transforms into the exquisite sweetness and depth of the tom kha soup, leaving a lingering, delightful aftertaste. Beware, though, as it does come with a hint of spiciness. According to Huston, the spice level of the cocktail is rated at a modest two out of five.
